The assumed pepper in pink pajamas is in reality not pepper at all! It is some kind of ivy, being part of the family of wintergreens. Pink pepper lacks piparin – the substance that makes pepper, well, pepper. So, it tastes rather more sweet than spicy. Maybe that’s the reason why pink pepper fits so wonderfully with the raclette cheese. And so, to get the full taste out of the ‘pepper’, we dry it instead of roasting it.
