this cheese is tended daily, and by hand!
in a later stage of ripening it is smeared weekly. the intense ripening process produces a very pronounced crust. It’s very savory – a more mild goat cheese. This cheese is produced mostly in summer, and we then mature it as in winter there is very little milk leftover for making cheese.
It is a piece of gorgeous hard goat cheese.
