cream cheese with rosemary – yes, that‘s what was meant to be! But somehow blue mould grew on top of this fresh cheese resulting in the creation of the ‘blue brain’ !
Due to the refreshing taste and the buttery dough the cheese is the perfect accompaniment to a flute of prosecco.
The character of the blue brain varies with its maturation, when young is creamy with a slight roasted note, melting on the palate. Then it develops bluish flavour. the blue brain develops a darker or a lighter blue, and each of them looks different!
